Warm Roasted Veggie Salad

This is such an easy and yummy lunch to prepare and it’s so healthy for you!
So you start by roasting your vegetables : Here I have some sweet potatoes , zucchini, onions and cauliflower and spices for flavor : (garlic powder, onion powder, turmeric, dried herbs)
While waiting for thé vegetables to roast , I pan fried my chicken.
Chicken breast ( or choice of protein) Pan-Fried.
I prepared the dressing which is so yummy!
Dressing:
– 2 tbsp olive oil
– 2 tbsp apple cider vinegar
– 2 minced garlic
– 1 tbsp mixed herbs
– Salt and PepperThen we assemble the plate :
Put your veggies first and then you add chicken and you drizzle with the dressing. It’s so yummy , so easy to prepare and I loved it so much that I actually prepared it again for lunch today but this time with a different twist.. I added goat cheese and some coriander leaves as well!
